Hearty Chicken Noodle Soup

The Good Food Diet


-3 chicken breasts (about 32 ounces)
-1 C carrots, finely sliced
-1 c finely sliced celery
-1/3 c diced yellow onion
-2 c mushrooms, sliced
-1 TB evoo
-2 tsp marjoram spice
-dash of thyme
-1 TB paprika
-2 tsp garlic or use a couple cloves of fresh
-2 tsp basil
-salt and pepper to taste
-about 6 cups of water
-3 c wide noodles
-1/4 c or so fresh snipped parsley

Sautée the chicken in the evoo and season with the spices. Add the veggies after you have cooked the chicken on each side about 3 minutes. Let all that cook about 5 minutes.

Add the water, give it a great stir to loosen up the delicious stuff on the bottom of the pan. Bring it to a boil and cook it about 30 minutes or until you can shred the chicken with two forks. Shred it, toss…
